The region’s unique climate—low rainfall, warm summers, and cool nights—creates ideal conditions for viticulture. The cool, dry, and sunny environment helps produce wines with vibrant acidity and a true reflection of the land’s character.

The day kicks off with a visit to Waipara Springs, where you'll enjoy a plattered lunch featuring local produce like Akaroa salmon, fresh cheeses, seasonal fruits, and herb-infused sausages. The lunch is designed to enhance the tasting experience, offering a perfect balance of savoury and fresh flavours that complement the wines.

Next, you move to Georges Road, where you can taste some of the region’s most famous varietals like Syrah, Pinot Noir, Pinot Gris, and Riesling. These wines reflect Waipara's ability to grow elegant, structured reds and fresh, aromatic whites.

Torlesse offers a more relaxed tasting experience, where you can unwind in the gardens and enjoy refreshing citrus-scented Pinot Gris and Sauvignon Blanc.

If one of the above wineries is not available we will include a stop at Pegasus Bay lets you taste earthy reds and crisp whites, all while learning about how the region’s climate affects the wines' unique profiles.
